Bin 707 Team Set to Open Taco Party

Bin 707 could easily fit in on a street in LoHi or RiNo in Denver, but you'll find the restaurant in downtown Grand Junction on Colorado's Western Slope.
With an emphasis on sustainability and the sourcing of ingredients from the Grand Valley, Bin caters to both the burger/fries/beer diner and the specialty cocktail/elk carpaccio diner. It's a restaurant that strives to be "casual and welcoming" to the local community and visitors alike, and it feels authentic when you sit at the bar and chat with the knowledgeable staff about wines from the valley and the whiskey selection.
Chef and owner Josh Niernberg will open new concept Taco Party late this month in downtown Grand Junction. The 50-seat casual restaurant will offer tacos made from Colorado ingredients along with appetizers, salads and soft-serve ice cream. The team also plans to open Dinner Party, a food incubator hosting pop-up events with featured chefs in support of local agriculture.
As the Grand Valley continues to grow in popularity for its amazing desert setting, mountain access and mountain biking trails, agritourism is expected to grow along with it.
"Agritourism has seen a tremendous rise over the past seven years in our food and farm industries, and that rise is the direct result of what Josh and Jodi Niernberg have done with Bin 707 Foodbar," says Robin Brown of Brownhouse PR in Grand Junction who represents the restaurant group.
"Prior to their opening, there was no relationship between our local farms and our restaurants. The majority of our produce was wholesaled to the Front Range and there was almost no local pride for what our own farmers were producing. Josh put out a call to local farmers that he would create his menu around whatever could be produced here, and he's remained true to that vision."
Exploring the Western Slope's gorgeous farms and wineries, especially by bicycle, is truly a special experience. Spring is an excellent time to visit Grand Junction - and soon you'll also have tacos to entice you there.
